Ingredients

  • 1 can chickpeas, drained and rinsed

  • 1/4 cup diced red onion

  • 1/4 cup diced celery

  • 2 tablespoons vegan mayonnaise

  • 2 tablespoons Dijon mustard

  • 1 tablespoon fresh lemon juice

  • 1/4 teaspoon garlic powder

  • Salt and pepper, to taste

  • Gluten-free bread

  • Lettuce, tomato, and avocado (optional)

Preparation

Step 1

In a medium mixing bowl, mash the chickpeas using a fork or a potato masher.



Step 2

Add in diced red onion, celery, vegan mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper.
