Ingredients
1 cup cooked quinoa
1 can black beans, drained and rinsed

1/2 cup diced bell pepper
2 cloves of garlic, minced
1 teaspoon chili powder

Gluten-free taco shells or lettuce leaves

Preparation
Step 1
In a skillet over medium heat, sauté the red onion, bell pepper, and garlic for 5 minutes, or until softened.
