Ingredients

  • 1 cup cooked quinoa

  • 1 can black beans, drained and rinsed

  • 1/2 cup diced red onion

  • 1/2 cup diced bell pepper

  • 2 cloves of garlic, minced

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • Salt and pepper, to taste

  • Gluten-free taco shells or lettuce leaves

  • Toppings of your choice, such as salsa, avocado, or vegan sour cream

Preparation

Step 1

In a skillet over medium heat, sauté the red onion, bell pepper, and garlic for 5 minutes, or until softened.



Step 2

Add the black beans, chili powder, cumin, salt and pepper, and cook for an additional 2-3 minutes.



Step 3

Add cooked quinoa and stir everything together.



Step 4

Cook for 2-3 minutes or until heated through


Step 5

Serve the quinoa and black bean mixture in gluten-free taco shells or lettuce leaves, and top with your desired toppings.
