Ingredients


  • 1 bunch of kale, chopped

  • 1 pint of fresh strawberries, hulled and sliced

  • 1/4 cup of sliced almonds

  • 1/4 cup of crumbled feta cheese ( vegan)

  • 2 tbsp of balsamic vinegar

  • 2 tbsp of olive oil

  • Salt and pepper, to taste

Preparation

Step 1

In a large bowl, combine the kale, strawberries, almonds and vegan feta.


Step 2

In a small bowl, whisk together the balsamic vinegar, olive oil, salt and pepper.


Step 3

Toss the dressing with the salad and let it sit for 5-10 minutes so that the kale can soften.
