Ingredients

  • 1 cup green or brown lentils, rinsed and drained

  • 2 medium carrots, diced

  • 2 celery stalks, diced

  • 1 large onion, diced

  • 3 garlic cloves, minced

  • 6 cups hot water 

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 bay leaf

  • 1 tbsp garlic salt 

  • 1 tsp turmeric 

  • olive oil

  • Salt and pepper to taste

Preparation

Step 1

In a large saucepan, heat a little oil over medium heat.


Step 2

Add the diced onions, carrots, and celery, and cook until the vegetables are tender, about 5 minutes.


Step 3

Add the minced garlic and cook for another minute.


Step 4

Add the rinsed and drained lentils, hot water, thyme, rosemary, bay leaf,garlic salt, turmeric, salt, and pepper.


Step 5

Stir everything together, bring the soup to a boil, then reduce the heat and let it simmer for 30-40 minutes or until the lentils are tender.


Step 6

Remove the bay leaf and serve the soup hot.
