Ingredients


  • 1 cup quinoa

  • 2 cups water

  • 1 can of black beans, drained and rinsed

  • 1 red bell pepper, diced

  • 1/2 red onion, diced

  • 1/2 cup fresh cilantro, chopped

  • 2 tbsp olive oil

  • 1 tbsp red wine vinegar

  • 1 lime, juiced

  • Salt and pepper, to taste

Preparation
