Ingredients
1 cup quinoa
2 cups water
1 can of black beans, drained and rinsed
1 red bell pepper, diced
1/2 red onion, diced
1/2 cup fresh cilantro, chopped
2 tbsp olive oil
1 tbsp red wine vinegar
1 lime, juiced

Preparation
