About the Recipe
Prepare to embark on a culinary adventure with our "Vegan Harissa Shawarma" - a recipe that seamlessly blends the aromatic and robust flavors of Middle Eastern cuisine with a contemporary health-conscious approach. This dish transforms humble oyster mushrooms into a celebration of taste, texture, and tantalizing flavors.
Starting with high-quality oyster mushrooms, we ensure each piece is cleaned and kept whole to maintain its meaty texture. Oyster mushrooms have a unique ability to absorb flavors, making them the perfect canvas for our marinade. This isn't just any marinade, it is a symphony of spices that include cumin, coriander, garlic powder, chili powder, turmeric, and smoked paprika, with an added kick from red pepper flakes. This combination imbues the mushrooms with a depth of flavor that's undeniably enticing.
The magic continues with the addition of harissa - a fiery and fragrant North African spice paste. Harissa adds a layer of complexity and warmth to the marinade that is both unexpected and irresistible. A touch of balsamic glaze adds a tangy sweetness, rounding out the bold spice profile and creating a balanced harmony of flavors.
Once the mushrooms are marinated, they are sautéed in a generous swirl of olive oil until they are lightly browned, releasing their earthy aroma and intensifying their flavor. After sautéing, the mushrooms are skewered and roasted in a hot oven. The high heat brings out their natural sweetness, and the edges caramelize to a delicious crispness.
Basting during roasting ensures that every mushroom bite is juicy and packed with flavor. After a brief rest out of the oven, the mushroom shawarma is sliced into perfect, succulent pieces, ready to be served.

Ingredients
Ingredients
1 & 1/2 lbs oyster mushrooms cleaned and whole
5 tbsp olive oil
3/4 tsp each of cumin, coriander, garlic powder, chili powder, turmeric, smoked paprika
1/2 tsp each of red pepper flakes and salt
1 lemon for juicing
1 tbsp harissa
3 tbsp balsamic glaze
Preparation
Step 1
Start by cleaning the oyster mushrooms. Ensure that they are whole and clean for the best results.
Step 2
Prepare the marinade by mixing together the cumin, coriander, garlic powder, chili powder, turmeric, smoked paprika, red pepper flakes, salt, lemon juice, harissa, and balsamic glaze in a separate bowl.
Step 3
Add the cleaned oyster mushrooms to the marinade. Make sure each mushroom is thoroughly coated with the marinade.
Step 4
Add olive oil to a pan and bring it to medium heat. Once the oil is heated, sauté the marinated oyster mushrooms until they start to brown.
Step 5
After sautéing, place a weighted object on top of the mushrooms to remove any excess moisture.
Step 6
Once the mushrooms are dry, skewer them. After skewering, apply another layer of the marinade for added flavor.
Step 7
Preheat your oven to 450 degrees. Once preheated, roast the skewered mushrooms for approximately 20 minutes. Remember to baste them with the marinade every 5-7 minutes.
Step 8
Once roasted, remove the mushrooms from the oven and allow them to cool.
Step 9
After the mushrooms have cooled, slice your mushroom shawarma.
Step 10
Assemble your Vegan Harissa Shawarma: Lay out an almond flour tortilla, spread some vegan Tzatziki sauce on it, add a layer of sliced tomatoes and red onions. Then, place your sliced mushroom shawarma on top. Fold the tortilla to wrap everything up.
Now your Vegan Harissa Shawarma is ready to be served. Enjoy this flavorful, healthy, and satisfying meal!
