Ingredients
2 tablespoons Cold Pressed Avocado or Olive oil
2 medium onion, sliced
5 garlic cloves, finely chopped
1 red bell pepper, seeded and diced
2 teaspoon paprika
1 teaspoon cumin
1-2 Jalapenos Chopped ( Optional)
1 Pack red grape or cherry tomatoes
salt and pepper, to taste
1 small bunch fresh cilantro, chopped
1 small bunch fresh parsley, chopped
2 -3 Cups ChickpeasÂ
Preparation
Step 1
Heat oil in a large sauté pan on medium heat.
Step 2
Add the chopped bell pepper, onion, cherry tomatoes and cook for 5 minutes or until the onion becomes translucent.
Step 3
Add garlic, chickpeas and spices and cook for an additional minute.
Step 4
Season with salt and pepper.
Step 5
Cover the pan and cook for 5 minutes stirring frequently, Garnish with chopped cilantro and parsley.
