Ingredients
8 oz of your favorite pasta ( Brown Rice Pasta Recommend for Gluten Free)Â
1 tbsp of olive oil
2 cloves of garlic, minced
1 cup of sliced mushrooms
1/2 cup of cherry tomatoes, halved
1/4 cup of chopped basil
Salt and pepper, to taste
Garlic Salt, to taste
Nutritional yeast (optional)
Vegan Cheese ( optional)
Preparation
Step 1
Cook the pasta according to the package instructions. Drain and set aside.
Step 2
In a large skillet, heat the olive oil over medium heat. Add the garlic and cook for 1-2 minutes, until fragrant.
Step 3
Add the mushrooms and cherry tomatoes to the skillet and cook for about 5 minutes, until the mushrooms are tender and the tomatoes are slightly blistered.
Step 4
Pour the tomatoe suace in the skillet, stir and bring to a boil. Reduce the heat to medium-low and let it simmer for about 5 minutes, until the sauce has thickened.
Step 5
Add the cooked pasta, basil, salt and pepper to the skillet and stir until everything is well combined.
Step 6
Optionally you can sprinkle nutritional yeast on top for a cheese-like flavor.
Step 7
Serve the pasta hot and enjoy.
